Preheat the oven to 350 degrees F and spray a 9X13 pan with a non-stick cooking spray.
Brown 1 pound ground beef and ½ chopped onion until cooked. While the meat is cooking, boil 16 oz rotini noodles according to package directions until al dente.
Mix 28 oz crushed tomatoes, 2 tsp minced garlic, 1 Tbsp Italian seasoning, ½ tsp salt, and ½ tsp pepper into the meat mixture.
Reserve 4 oz (half) of the shredded mozzarella cheese to sprinkle on top of the casserole.
Combine the remaining 4 oz shredded mozzarella cheese, 8 oz ricotta cheese, and 1 beaten egg together in a large bowl.
Stir in the cooked pasta and coat the pasta completely with the cheese mixture.
Place half of the pasta mixture on the bottom of the 9x13 pan. Then place half of the meat mixture on top of the pasta.
Repeat the layers with the remaining pasta and meat mixture. Top with the reserved 4 oz shredded mozzarella cheese.
Bake uncovered at 350 degrees for 30 to 45 minutes (until bubbly). Let stand for 10 minutes before serving.

This casserole freezes great! To freeze, prepare the casserole as directed in a foil 9X13 pan. Cover and freeze. Then when you are ready to bake, thaw it out overnight in the refrigerate and then bake at 350 degrees F for 1 hour. Enjoy!
