Instructions
In a large mixing bowl, beat the softened butter and granulated sugar with a hand mixer or stand mixer until light and fluffy.
Add the egg and vanilla extract. Mix until just combined.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not over mix.
Gently fold in the white chocolate chips and 1 cup Lucky Charms marshmallows, reserving additional marshmallows for topping the cookies. Be careful not to overmix, as the marshmallows can break apart.
Cover and chill the cookie dough for 30–60 minutes.
Preheat the oven to 350°F and line baking sheets with parchment paper.
Scoop the cookie dough onto the prepared baking sheets, spacing the cookies about 2–3 inches apart. Gently press 4–5 additional marshmallows onto the top of each cookie.
Bake for 8–10 minutes, until the edges are lightly golden. The centers may still look slightly underbaked.
Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Store leftover cookies in an airtight container at room temperature for up to 5 days.
