Ingredients
For the Rice:

For the Sauce:

Red Enchilada Sauce

Black Pepper
Instructions
In a small bowl, whisk together the enchilada sauce, cumin, chili powder, paprika, salt, and black pepper. Set aside.
Heat the oil in a large skillet over medium-high heat.
Add the minced garlic and cook for 30 seconds, until fragrant.
Add the diced onion and bell pepper. Cook for 2–3 minutes, stirring occasionally, until the onion is softened.
Stir in the black beans and corn. Cook for 1–2 minutes until heated through.
Add the cooked rice and pour the sauce over the top. Stir until everything is evenly coated.
Cook for an additional 2–3 minutes, stirring frequently, until heated through.
Serve immediately and enjoy!
Notes
Refrigerate the leftovers in an airtight container for up to 5 days.
