Ingredients

Medium Size Sweet Potatoes

Instructions
Wash and dry 2 medium size sweet potatoes, then rub 2 teaspoons olive oil evenly over the potatoes.
Sprinkle ½ teaspoon sea salt over the sweet potatoes.
Place the sweet potatoes on a microwave-safe plate and microwave for 5 minutes.
Flip the sweet potatoes over and microwave for an additional 3–5 minutes until fork tender.
Carefully remove the sweet potatoes from the microwave and let cool slightly.
Slice open the sweet potatoes and top with 1 tablespoon butter, ½ teaspoon salt, and ½ teaspoon pepper before serving.
Notes
Refrigerate in an air tight container for up to 5 days.
