Preheat oven to 350 degrees F (175 degrees C). Spray a mini-muffin pan with non stick spray.
In a large mixing bowl, whisk together ½ cup melted butter, 1 cup white sugar, 2 eggs, and 1 teaspoon vanilla extract until smooth.
Add ? cup unsweetened cocoa powder, ½ cup all-purpose flour, ¼ teaspoon salt, and ¼ teaspoon baking powder. Stir by hand just until the batter is combined.
Spoon approximately 1 tablespoon of batter into each mini muffin cup, filling about 20 mini muffins.
Bake for 8 to 10 minutes or until the tops are set and a toothpick inserted in the center comes out with a few moist crumbs.
Allow the brownies to cool in the pan for 5 minutes, then carefully remove them to a wire rack to cool completely.
Sprinkle with powdered sugar before serving, if desired.
Notes
You could easily add nuts to this brownie recipe if your family likes. Or if you are making a hot fudge sundae, just sprinkle a few on top! These brownies are a hit no matter how you chose to serve them.
