Instructions
In a medium mixing bowl, combine 1 sleeve (9 full-size) finely crushed graham crackers and 2 tablespoons granulated sugar.
Stir in 2 tablespoons melted butter until the crumbs are evenly coated.
Divide the graham cracker mixture evenly among 8-10 small 4-ounce jelly jars, using about 2 tablespoons of crumbs per jar.
Press the crumbs firmly into the bottom of each jar with the back of a spoon or a tart shaper. Set aside.
In a large mixing bowl, beat the softened 8-ounce cream cheese until smooth.
Add the thawed 8-ounce whipped topping and ½ cup strawberry preserves. Beat until the mixture is smooth and well combined.
Fold in 1 cup of the chopped fresh strawberries.
Spoon the cheesecake filling evenly into the prepared jars and smooth the tops with the back of a spoon.
Refrigerate the jars for 2-4 hours, or until the filling is set.
Before serving, top each jar with the remaining ¼ cup chopped fresh strawberries and garnish with fresh mint leaves, if desired.
