Peel 3 large sweet potatoes and cut them into fry-sized pieces approximately ¼-inch thick.
In a mixing bowl, toss the sweet potatoes with 1 Tablespoon corn starch until evenly coated.
Place the potatoes on parchment or foil lined baking sheets. Spread them out as much as possible so they cook evenly.
Drizzle 2 Tablespoons olive oil over the potatoes.
In a small bowl, mix together ½ teaspoon garlic salt, ½ teaspoon pepper, and ½ teaspoon paprika. Sprinkle the seasoning mixture evenly over the potatoes.
Bake uncovered for 15–20 minutes, tossing halfway through the cook time, until the potatoes are cooked through and slightly browned.
