Instructions
Heat 3 tablespoons vegetable oil in a large skillet over medium-high heat.
Once the oil is hot, add 3 medium sweet potatoes sliced into ?-inch thick slices and 3 medium russet potatoes sliced into ?-inch thick slices.
Season the potatoes with 1 teaspoon salt and 1 teaspoon black pepper. Stir to coat the potatoes evenly.
Reduce the heat to medium and cover the skillet with a lid.
Cook for approximately 10 minutes, stirring frequently to prevent sticking and ensure even cooking.
Gently stir in ½ chopped onion, if using.
Cover and continue cooking for an additional 8–10 minutes, stirring frequently, until the potatoes are tender and browned around the edges.
Remove from the heat and serve immediately. Enjoy!
Notes
I love using a cast iron skillet for this recipe but any large skillet will work great. Also, this recipe works great if you use all regular potatoes or all sweet potatoes depending on your family's preference.
