Pour enough oil for frying into a large pot or deep fryer to create about 2 inches of depth.
Heat the oil to 350°F.
In a shallow bowl, whisk together ½ cup all-purpose flour, 1 tsp salt, ½ tsp pepper and ½ tsp garlic powder.
In a second bowl, beat 2 large eggs until smooth.
Place 1 cup panko breadcrumbs in a third bowl.
Coat each piece of 1 lb shrimp in the flour mixture.
Dip the floured shrimp into the beaten eggs.
Press the shrimp into the panko breadcrumbs, coating thoroughly and gently pressing the crumbs onto the shrimp.
Carefully place the breaded shrimp into the hot oil in a single layer, working in batches if needed.
Fry for approximately 1 minute per side, or until the shrimp are golden brown and cooked through.
Remove the shrimp with a slotted spoon and transfer to a paper towel-lined plate to drain excess oil.
Allow the shrimp to cool for 2–3 minutes before serving.
Notes
Vegetable Oil, Canola Oil or Peanut Oil all work great for frying this easy shrimp recipe. Make sure not to overcook the shrimp. Watch them closely as they are frying to prevent them from overcooking. Refrigerate any leftovers in an airtight container for up to 3 days.
