220 oz cans pineapple chunks drained, (save 2 tablespoons pineapple juice )
1cupRitz cracker Crumbs
1stick buttermelted
Instructions
Preheat the oven to 350 °F.
Grease a medium-size casserole dish non stick spray.
Stir together 1 cup sugar and 6 tablespoons all purpose flour in a large bowl. Gradually stir in 2 cups grated sharp cheddar cheese.
Add 2 drained 20 ounce cans pineapple chunks and stir until the ingredients are well combined.
Pour the mixture into the prepared casserole dish.
In another medium bowl, combine 1 cup Ritz cracker crumbs, 1 stick melted butter, and 2 tablespoons reserved pineapple juice. Stir with a rubber spatula until evenly blended.
Spread crumb mixture on top of pineapple mixture. Bake for 25 to 30 minutes, or until golden brown.
