Creamy Penne alla Vodka is a simple stovetop pasta recipe made with tender penne and a rich tomato cream sauce. It comes together with easy ingredients and has the perfect balance of comforting flavor and restaurant-style taste.
Cook 12 ounces penne pasta based on the package instructions. Reserve some pasta water, then drain.
Heat 1 tablespoon olive oil and 2 tablespoons butter in a large skillet over medium heat. Add 1 small finely chopped onion and cook until soft.
Stir in 2 minced garlic cloves and cook for 1 minute.
Add ½ cup vodka and simmer for 2-3 minutes.
Stir in ¼ cup tomato paste, 1 teaspoon dried oregano, 1 teaspoon dried basil, ½ teaspoon salt, and ½ teaspoon black pepper.
Reduce the heat and stir in ¾ cup heavy whipping cream until smooth and combined.
Add the cooked penne pasta and toss to coat in the sauce. Add reserved pasta water as needed to thin the sauce.
Stir in ½ cup fresh grated parmesan cheese until melted and enjoy!

Refrigerate any leftovers in an airtight container for up to 5 days. I don’t recommend subbing a different dairy product instead of the heavy whipping cream as it gives this pasta dish its richness and flavor. Any type of easy bite size pieces of pasta will work instead of penne pasta in this recipe.
