Preheat a large skillet or griddle over medium-high heat (approximately 400 degrees F).
Add 1 tablespoon avocado oil and 1 tablespoon butter to the skillet or griddle. Allow the butter to melt and spread the oil and butter evenly over the surface.
Add 1 sliced white onion and sauté for 3 to 5 minutes, stirring occasionally, until the onion is softened and cooked to your preference. Transfer the onions to a plate.
Add 1½ pounds thinly sliced steak to the same skillet or griddle and spread it into an even layer.
Season the steak with ½ teaspoon garlic powder, ½ teaspoon salt, and ½ teaspoon black pepper.
Cook undisturbed for 3 to 5 minutes until the steak begins to brown.
Flip the steak and use a spatula to chop it into bite-sized pieces. Continue cooking for 2 to 3 more minutes, or until the steak is cooked through.
Return the cooked onions to the skillet and stir them into the steak.
Lay 8 slices provolone cheese evenly over the steak and onion mixture. Cover with a lid for 1 to 2 minutes until the cheese is melted.
While the cheese is melting, toast 4 hoagie rolls.
Divide the cheesy steak and onion mixture evenly among the toasted hoagie rolls.
Serve immediately while warm.
