Pineapple Casserole is a popular southern dish. It is loaded with pineapple. cheese, and topped with crushed crackers. It is delicious and easy to make.
Preheat the oven to 350 degrees F and spray a 9x9-inch baking dish or a 1½-quart casserole dish with non-stick cooking spray.
In a large mixing bowl, whisk together ? cup all-purpose flour and ½ cup granulated sugar.
Stir in 1 can (approximately 20 ounces) pineapple tidbits, drained, and 1 can (approximately 20 ounces) crushed pineapple, drained.
Add 2 cups shredded sharp cheddar cheese and stir until well combined.
Pour the pineapple mixture into the prepared baking dish and spread it into an even layer.
In a separate small bowl, combine 1 sleeve Ritz crackers (approximately 30 to 40 crackers), crushed, with ¼ cup melted butter.
Sprinkle the cracker mixture evenly over the top of the casserole.
Bake for 35 to 40 minutes until the casserole is heated through and the topping is golden brown.
Remove from the oven and serve warm.
Notes
This casserole can easily be a dessert or a side dish. We do not recommend fresh pineapple for this recipe. Refrigerate the leftovers covered for up to 4-5 days. You can easily reheat the leftovers in the oven or the microwave to reheat and enjoy your leftovers.
