In a large bowl, whisk together the flour, baking powder, sugar, salt, and cocoa powder.
In a separate bowl, whisk together the eggs, buttermilk, melted butter, and vanilla extract until combined. Add 5–7 drops of pink food coloring, or enough to reach your desired color.
Pour the wet ingredients into the dry ingredients and stir until just combined. A few lumps are fine. Let the batter rest for 5–10 minutes.
Preheat the waffle iron and lightly coat it with nonstick cooking spray.
Pour the appropriate amount of batter into the waffle iron and cook according to the manufacturer's instructions. Repeat with the remaining batter.
While the waffles cook, beat the softened cream cheese, powdered sugar, vanilla, and milk with a hand mixer or stand mixer until smooth and well combined.
Serve the waffles warm with the cream cheese glaze drizzled over the top.
