In an 8 to 10-inch cast iron skillet, melt 1 tablespoon butter over medium-high heat. Whisk in 1 tablespoon all-purpose flour and cook for approximately 1 minute, stirring constantly.
Gradually whisk in 1 cup whole milk. Continue whisking and cook for 3–4 minutes until the mixture thickens.
Remove the skillet from the heat and stir in 12 ounces shredded Monterey Jack cheese until completely melted.
Stir in ¼ teaspoon cumin, ¼ teaspoon salt, ¼ teaspoon black pepper, and 2 ounces chopped green chilies until evenly combined.
Sprinkle 4 ounces shredded mozzarella cheese evenly over the top.
Place the pan in the oven and bake for 12-15 minutes until the top of the cheese turns golden brown.
Serve immediately with your favorite chips and enjoy!

Refrigerate the leftovers in an airtight container for up to 3-4 days. Reheat in the oven when enjoying the leftovers. If you do not have a cast iron skillet, you can use any oven safe skillet or saucepan for this recipe.
