Place 1 refrigerated pie crust into a 9-inch pie pan. Crimp the edges and gently prick the bottom of the crust with a fork.
In a large mixing bowl, whisk together 6 large eggs, ¾ cup whole milk, ½ teaspoon salt, and ¼ teaspoon pepper.
Sprinkle 1 cup diced cooked ham, 2 finely chopped green onions, ½ cup shredded cheddar cheese, and ½ cup shredded mozzarella cheese into the pie crust.
Pour the egg mixture on top of these ingredients in the pie crust.
Top with the remaining ¼ cup shredded cheddar cheese and ¼ cup shredded mozzarella cheese.
Bake for 35-40 minutes until the center is completely set. Gently tent the top of the quiche with foil for the last 10-15 minutes of the cook time if the crust starts to get too brown.
Let the quiche cool for 5-10 minutes to set and then it’s ready to slice and serve.

This is a great base easy quiche recipe. You can use any type of protein that you prefer. Sausage or bacon would also be delicious in the recipe. Also, you can use your favorite type of melting cheese. Gruyere, white cheddar or mozzarella would all be delicious in this quiche recipe. Make sure the quiche has cooled completely at room temperature before refrigerating leftovers. The leftovers should be good for up to 5 days in an airtight container.
