Make these festive Reindeer Pancakes for Christmas morning to enjoy during the holiday season. Kids will love Rudolph Pancakes and they are so easy to make.
In a large bowl, whisk together the flour, brown sugar, baking powder, and salt.
In a separate bowl, whisk together the egg, milk, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir just until combined.
Stir in the melted butter. Do not overmix the batter.
Heat a nonstick griddle or skillet over medium heat.
Pour about ? cup batter onto the griddle for each large pancake to form the reindeer faces.
Cook for about 2–3 minutes, or until bubbles form on the surface and the edges begin to set.
Flip and cook for another 1–2 minutes, or until golden brown.
Use the remaining batter to make 12 small oval pancakes for the reindeer ears.
For the Reindeer:
Cook the bacon until crisp using your preferred method. If microwaving, arrange the bacon on a paper towel-lined microwave-safe plate and cook according to package directions until crisp.
Place 1 large pancake on each serving plate.
Add 2 pieces of bacon above each pancake for the antlers and 2 small oval pancakes for the ears.
Use whipped topping and chocolate chips to create the eyes.
Add a strawberry slice for the nose.
Serve immediately with syrup, if desired.
Notes
These pancakes are best assembled just before serving.Cook the bacon until crisp so it holds its shape well as the reindeer antlers.Store leftover pancakes and bacon separately in airtight containers in the refrigerator for up to 5 days. Add the fresh strawberries and whipped topping when serving.
