Try delicious Ritz Cracker chicken recipe for dinner tonight. If you have these buttery ritz crackers then you can make this delicious baked ritz chicken.
Preheat the oven to 375 degrees F and spay a baking dish with a non stick cooking spray.
Whisk the 2 eggs in a large shallow bowl.
Place 2 sleeves Ritz crackers in a food processor and blend until fine crumbs form. Transfer the crumbs to a separate shallow bowl and stir in ½ teaspoon garlic salt and ½ teaspoon black pepper.
Dip each of the 4 boneless, skinless chicken breasts into the egg mixture, then coat each chicken breast thoroughly with the cracker mixture.
Place the coated chicken breasts into the prepared baking dish. Repeat until all chicken has been coated.
Cut ? cup butter into small pieces and place the butter evenly on top of the chicken.
Bake for 25–35 minutes until the chicken is cooked through, lightly browned, and reaches an internal temperature of 165 degrees Fahrenheit.

Recipe Tips
Frozen Chicken - If your chicken is frozen, thaw overnight in the refrigerator. You can also place frozen chicken in a bag and submerge in cold water.
Shallow Bowls - Coating chicken with eggs and ritz cracker crumbs works best when you use a shallow bowl.
Use both hands - I use one hand to dip chicken in eggs and the other hand to dip in cracker crumbs. This prevents lumps of ingredients on your hands.
Sour Cream - My kids like to dip their butter chicken in sour cream.
Coating Chicken - When you are dipping chicken in the egg and cracker crumbs, make sure all sides get coated.
Recipe Variations
Cheesy Ritz Chicken - Add freshly shredded cheddar cheese or mozzarella under the cracker crust for a delicious cheesy variation.
Ranch Ritz Chicken - Mix a ranch seasoning packet into the cracker crumbs. Italian Seasoning is also a great option.
Spicy version - Add 1/2 teaspoon of cayenne or red pepper flakes to the coating.
