Cut each acorn squash in half and use a spoon to remove the seeds and stringy pulp.
Arrange the squash halves cut-side up on a baking sheet.
Lightly season each half with salt.
Place 1 tablespoon butter in the center of each squash half.
Sprinkle ½ tablespoon brown sugar over each half.
Drizzle each squash half with ½–1 teaspoon maple syrup.
Bake for 50–60 minutes, or until the squash is fork-tender and lightly caramelized.
Serve immediately.
Notes
For a less sweet, more savory version, substitute olive oil for the butter and omit the brown sugar and maple syrup. Season with salt and black pepper to taste.The recipe allows for 2–4 teaspoons maple syrup. The cost calculation uses 4 teaspoons.
