Remove the husks from the tomatillos and rinse them well to remove the sticky residue. Pat dry.
Remove the stems from the jalapeños and remove the seeds if you prefer a milder salsa.
Add the tomatillos, jalapeños, and minced garlic to a food processor or blender. Pulse until the salsa reaches your desired consistency.
Add the cilantro, diced onion, lime juice, and salt. Pulse a few more times until everything is combined, being careful not to over process if you prefer a chunkier salsa.
Taste and adjust the salt or lime juice if needed.
Serve immediately, or refrigerate for 30 minutes before serving to allow the flavors to meld.
Notes
Use 1-2 jalapeño peppers depending on their size and how spicy you like your salsa. Add more jalapeño peppers to make the salsa spicer!
