Brown 1 pound breakfast sausage in a large skillet with deep sides over medium high heat, breaking up the sausage as it cooks. Do not drain off the excess grease.
Turn the heat down to medium-low. Add the butter to the pan and melt the butter.
Sprinkle 1/4 cup all purpose flour over the sausage, stir to coat the sausage evenly, and cook for approximately 1 minute.
Slowly stir in 2 1/2 cups whole milk and continue to cook on a low simmer for 3 to 5 minutes until the gravy thickens.
Make sure to scrape down the bottom and sides of the pan to make sure that the flour and sausage does not stick to the pan.
Season the gravy with 1 teaspoon black pepper and 1/2 teaspoon salt, stir to combine, and serve warm over your favorite biscuits.
