1 ½poundsred baby potatoescut into 1/2-inch pieces
1onionsliced
1tablespoonOlive oil
1teaspoongarlic powder
1teaspoonSmoked Paprika
½teaspoondried thyme
½teaspoonSalt
¼teaspoonpepper
fresh parsleychopped, for garnish
Instructions
Preheat the oven to 400°F.
In a large bowl, combine 1 pound kielbasa sausage sliced into ½-inch pieces, 1½ pounds red baby potatoes cut into ½-inch pieces, and 1 sliced onion.
Drizzle 1 tablespoon olive oil over the sausage and vegetables.
Add 1 teaspoon garlic powder, 1 teaspoon smoked paprika, ½ teaspoon dried thyme, ½ teaspoon salt, and ¼ teaspoon pepper.
Toss everything together until evenly coated.
Spread the mixture in a single layer on a sheet pan, making sure the ingredients are not overcrowded for even roasting.
Roast for 25 minutes, stirring halfway through cooking, until the potatoes are tender and the sausage is lightly browned.
Remove from the oven and sprinkle with chopped fresh parsley for garnish, if desired.
