Instructions
In a small bowl, whisk together the soy sauce, hoisin sauce, water, brown sugar, and sesame oil. Set aside.
Cook the lo mein noodles according to the package directions until al dente. Drain and set aside.
Heat the coconut oil in a large skillet or wok over medium-high heat.
Add the shrimp and cook for 2-3 minutes, stirring occasionally, until they just turn pink and are cooked through. Do not overcook. Transfer the shrimp to a plate.
Add the coleslaw mix and sliced red bell pepper to the skillet. If the pan seems dry, add a little more oil. Cook for 3-5 minutes, stirring frequently, until the vegetables begin to soften.
Stir in the ground ginger and minced garlic. Cook for 30-60 seconds, until fragrant.
Return the shrimp to the skillet and pour in the prepared sauce. Toss to coat and cook for 1-2 minutes until heated through.
Add the cooked lo mein noodles and gently toss until everything is evenly coated with the sauce and warmed through.
Remove from the heat and serve immediately.
Notes
If you can't find lo mein noodles, ramen noodles (discard the seasoning packet), spaghetti, or linguine work well.
Pre-cooked shrimp can be used. Add them with the sauce and cook only until heated through.
For extra vegetables, stir in snow peas, broccoli florets, mushrooms, or shredded carrots.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet or microwave until warmed through.
