Slow Cooker Barbacoa Recipe is a tasty dinner idea with tender beef seasoned to perfection. Dinner will be a breeze with this easy slow cooker meal. Everyone will enjoy this beef in tacos, burritos, salads and more.
Place 3 pounds chuck roast in the bottom of a slow cooker.
In a food processor, combine 2 chipotle chilies in adobo, ¼ cup white vinegar, 1 tablespoon dried oregano, 1 teaspoon salt, 1 teaspoon black pepper, 2 tablespoons chili powder, 1 tablespoon ground cumin, 2 teaspoons minced garlic, the juice of 1 fresh lime, and 1 cup beef broth.
Process until the mixture is smooth and well combined.
Pour the sauce evenly over the chuck roast in the slow cooker.
Cook on low for 8-10 hours or high for 5 hours (until the meat is falling apart).
Shred the meat an stir back into the sauce
