Place 4 pounds beef roast in a 6-quart slow cooker.
Pour 1 cup beef broth and ¼ cup apple cider vinegar over the roast. Top with 1 sliced white onion, 1 tablespoon minced garlic, 2 teaspoons cumin, 1 teaspoon black pepper, 1 teaspoon salt, 2 teaspoons chili powder, and the juice from 2 fresh limes.
Cover and cook on low for 8 to 10 hours, or until the beef is tender and shreds easily with a fork. Shred the beef in the slow cooker.
