Instructions
Combine 2 diced boneless skinless chicken breasts, 1 can diced tomatoes (14.5 ounces) with their juices, 1 cup low-sodium chicken broth, 1 tablespoon taco seasoning, 1 can black beans (15 ounces), drained and rinsed, 1 cup frozen corn kernels, and 1 teaspoon salt in a slow cooker.
Cover and cook on the LOW setting for 8 hours.
Stir in 3 cups cooked brown rice. Add more chicken broth as needed until the mixture reaches your desired consistency.
Squeeze the juice from 2 fresh limes over the top and stir to combine.
Spoon into bowls and top each serving with 2 cups shredded cheddar cheese and any optional toppings you like, such as chopped cilantro, sour cream, diced avocado, salsa, hot sauce, diced green onions, or shredded lettuce.
