Ingredients

chicken thighs

can crushed tomatoes

Instructions
Place the chicken thighs in the bottom of the slow cooker.
Add the crushed tomatoes, sliced red and green bell peppers, sliced onion, oregano, bay leaf, mushrooms, salt, and black pepper.
Cover and cook on Low for 6–8 hours, or until the chicken is tender and cooked through.
About 15 minutes before serving, cook the fettuccine according to the package directions. Drain well.
Remove and discard the bay leaf.
Serve the chicken and tomato mixture over the cooked fettuccine and enjoy.
Notes
For a thicker sauce, remove the lid during the last 20–30 minutes of cooking.
Garnish with freshly grated Parmesan cheese and chopped parsley, if desired.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
