Ingredients
1 ½poundchicken breasts(diced into 1 inch pieces)
1poundRusset Potatoes(peeled and dice into 1 inch pieces)
2carrots(peeled and diced)
2tablespoonsyellow curry powder
1canfull fat coconut milk(14 oz)
1fresh lime(juiced)
1tablespoonminced garlic
½cupchicken broth
½teaspoonground ginger
2tablespoonbrown sugar
1teaspoonsalt
2tablespoonscornstarch
Instructions
Add 1½ lbs diced chicken, 1 lb diced potatoes, and 2 diced carrots to a crock pot.
Stir in 2 Tbsp curry powder, 1 (14 oz) can coconut milk, juice of 1 lime, 1 Tbsp minced garlic, ½ cup chicken broth, ½ tsp ground ginger, 2 Tbsp brown sugar, and 1 tsp salt.
Mix well to combine.
Cook on low for 4–5 hours.
Stir in 2 Tbsp cornstarch during the last 15–20 minutes if you want a thicker sauce.
Serve warm.

Potato - You can use sweet potato or red potato instead of russet potato if you prefer.
Stove Top Option - If you prefer, you can make this dish on the stove top. This would be a great option if you had cooked chicken that you needed to use.
