Ingredients

heavy whipping cream
¼
cup
chicken broth

russet potatoes
(peeled and sliced approximately 1/4" thick)

minced garlic
½
cup
shredded parmesan cheese
2 ½

shredded cheddar cheese

salt

pepper
Instructions
In a small bowl, whisk together the cream, chicken broth, garlic, salt, and pepper until combined.
Spray the inside of the crock pot with nonstick cooking spray.
Arrange 1/3 of the potatoes in an even layer in the bottom of the crock pot.
Pour 1/3 of the cream mixture over the potatoes, then sprinkle with 1/3 of the cheddar cheese and 1/3 of the Parmesan cheese.
Repeat the layers 2 more times, using the remaining potatoes, cream mixture, and cheeses.
Cover and cook on High for 3–4 hours, or until the potatoes are fork-tender.
Garnish with parsley, if desired. Serve warm and enjoy!
