Pierce 3 large sweet potatoes several times with a fork and wrap each one in aluminum foil. Bake at 400 degrees for 45-50 minutes until the potatoes are soft. You may need more cook time depending on the size of your sweet potatoes.
Allow the sweet potatoes to cool. Then remove the foil and the skin from the sweet potatoes.
Place the sweet potatoes in a large bowl. Add ¾ cup granulated sugar, ½ cup packed brown sugar, ½ cup instant vanilla pudding mix, ¾ cup evaporated milk, 2 large eggs, 6 tablespoons softened butter, 1 teaspoon ground cinnamon, and 1½ teaspoons vanilla extract. Beat the mixture until smooth and well combined.
Pour the filling into a 9-inch pre-made graham cracker crust.
Bake at 450 degrees F for 10 minutes. Then reduce the oven temperature to 350 degrees F and bake for 40 minutes until the pie is set.
Cool on a wire rack.
Serve topped with ice cream, whipped cream or whipped topping and enjoy!
