Strawberry Cake Mix Cookies

Ingredients

  • Strawberry Cake Mix
  • 8 oz Cool Whip
  • 1 Egg
  • ½ cup Powdered Sugar

Instructions

  • Preheat oven to 350F. Spray cookie sheet with non-stick cooking spray (this is really important for these cookies or they will stick to the pan).
  • In a large mixing bowl, combine 1 box strawberry cake mix, 1 container (8 ounces) Cool Whip, and 1 large egg. Mix with a hand mixer until fully combined and a thick batter forms. The mixture will appear foamy at first but will come together as you continue mixing.
  • Place ½ cup powdered sugar in a small bowl.
  • Using a small cookie scoop, scoop one ball at a time and roll in powdered sugar.
  • Place cookies, on greased cookie sheet about 2 inches apart.
  • Bake at 350F for 8-10 minutes. If these start to brown just a tiny bit around the edges, they are done. Do not over-bake them.
  • Let the cookies cool on the baking sheet for 5 minutes and then transfer them to a wire rack to cool completely. Enjoy!
