These delicious cookies are so easy that you will be shocked you haven’t made them before. They are also not an overly sweet cookie. They are light and fluffy and just so tasty.
I took these cookies to a family get-together and they disappeared so quickly! Everyone has been asking for more so I thought I would finally share the recipe.
With only 4 ingredients, you can make these any day of the week! These are the best strawberry cookies.
Ingredients for strawberry cookies:
- Strawberry Cake Mix
- 8 oz Cool Whip
- 1 Egg
- ½ cup Powdered Sugar
How to make strawberry cake mix cookies:
Mix the ingredients completely. Batter will be thick.
Use a cookie scoop to make perfectly shaped cookies.
Bake until they “poof” up and start to slightly brown around the edges. 🙂 Aren’t they just beautiful?
Sometimes we sprinkle with granulated sugar too.
Tips for strawberry cake mix cookies:
I highly recommend using a cookie scoop. You will thank me later because it saves so much time on spooning out the cookies.
Plus, they are not expensive. Amazon has some cookie scoops for very cheap.
I also think they look more uniform when you use a cookie scoop.
I bought the three pack, so I can use the smaller two for cookies and then the bigger one to fill up cupcakes. They will get lots of use and you will be glad you bought them.
You are getting three scoops – I use the smallest scoop for these cookies, the middle scoop for other cookies like Snickerdoodles and Jello Cookies and the largest scoop for cupcakes or muffins. Coat them in powdered sugar and bake.
Another handy kitchen item I like to use are these baking liners to bake my cookies. Clean up is easy and the cookies turn out perfectly every time!
We use the baking liners all the time so they get a ton of use. They are worth every penny!
You can also use baking sheet with parchment paper.
Also, make sure to have a good baking sheet. I just had to replace several of mine and thankfully found several on sale on Amazon.
It is super important to use good baking tools so your finished product will be just how you want it!

I like to buy several cake mixes when I spot a good sale at the grocery store. We tend to have lots of last minute baking needs and having this in the pantry means it not a problem!
It seems we always need to bring cookies to this event or that function. Since you don’t need many ingredients, they are so easy to mix up on the spur of the moment.
We can easily make these to take to a get together or event on a moments notice. The kids have even had a bunch of friends over and we made these quickly.

Strawberry Cookies
Ingredients
- Strawberry Cake Mix
- 8 oz Cool Whip
- 1 Egg
- ½ cup Powdered Sugar
Instructions
- Preheat oven to 350F. Spray cookie sheet with non-stick cooking spray (this is really important for these cookies or they will stick to the pan).
- Mix together the cake mix, cool whip and egg with a hand held mixer. This will be very "foamy" at first. Just keep mixing until everything is well combined and a batter is formed.
- Using a small cookie scoop, scoop one ball at a time and roll in powdered sugar.
- Place cookies, on greased cookie sheet about 2 inches apart.
- Bake at 350F for 8-10 minutes. If these start to brown just a tiny bit around the edges, they are done. Do not over-bake them.
- Let the cookies cool on the baking sheet for 5 minutes and then transfer them to a wire rack to cool completely. Enjoy!
