Instructions
Grease 9x13 baking dish.
Preheat oven to 325.
Crush 10 oz sugar cookies in a food processor.
Add 6 tablespoons melted butter and pulse until combined.
Press the cookie mixture evenly into the bottom of the prepared baking dish.
Bake for 30 minutes. Remove from the oven and set aside to cool completely.
Wash, hull, and slice 1 pound strawberries.
In a large mixing bowl, whip 1 cup heavy whipping cream with ½ cup sugar until stiff peaks form.
Add 8 oz softened cream cheese and mix until smooth and fully combined.
Fold in the sliced strawberries.
Spread the strawberry mixture evenly over the cooled crust.
Crush the remaining 5 oz sugar cookies and sprinkle them over the top.
Cover and place in the freezer until firm.
Remove from the freezer 15 to 30 minutes before serving.
Notes
This dessert is perfect for a Spring or Summer day. It is “fancy” enough for the adults, but tasty enough for the kids.
