Heat 2 teaspoons sesame oil in a large skillet over medium high heat.
Add 1 pound ground beef and ½ finely diced onion to the skillet. Cook the beef, breaking it up as it cooks, until the beef is no longer pink and the onions are tender, about 5-7 minutes. Drain off any excess grease.
In a separate bowl, whisk together ¼ cup brown sugar, ½ cup low sodium soy sauce, ¼ cup rice vinegar, ¼ cup honey, 2 teaspoons minced garlic, ½ teaspoon ground ginger, and 1 tablespoon cornstarch.
Then cook for 1 minute on a low simmer to thicken the sauce.
Serve immediately while warm topped with 2 tablespoons sesame seeds and 2 diced green onion stalks. Enjoy!

Refrigerate the leftovers in an airtight container for up to 5 days. We love serving this mixture over rice.
