Start with a large serving platter. We used a circle serving platter but you can easily use a rectangle platter as well.
Arrange 40 Ritz crackers in a large half circle around the outer edge of the platter to form the turkey feathers.
Add 4 ounces salami slices in another row inside the pepperoni to continue building the feather layers.
Cut 5 ounces cheddar cheese slices into strips or small shapes and place them in the center of the board to form the turkey body.
Add 3 ounces pepperoni slices in a slightly smaller half circle inside the crackers, overlapping them slightly to create another layer of feathers.
Place the turkey body and head in the center of the pepperoni and top the head with the Swiss cheese beak and chocolate chip for the eyes.
Use 3 ounces Swiss cheese slices to create the turkey head and beak shape above the body.
Place 2 chocolate chips on the Swiss cheese to form the turkey eyes.
Adjust the arrangement as needed to fill in gaps and create a full turkey shape.
Serve immediately or refrigerate until ready to serve.

This platter is best served fresh so that the cheeses and meats don't dry out. If you do make the platter ahead of time, make sure to cover it tightly with plastic wrap and refrigerate it until ready to serve.
