In a large bowl, whisk together 1¼ cups flour, 2 Tbsp brown sugar, 2 tsp baking powder, and ½ tsp salt.
In a separate small bowl, whisk together 1 egg, 1 cup milk, and 1 Tbsp vanilla extract.
Pour the wet ingredients into the dry ingredients and whisk until combined. Stir in 1 Tbsp melted butter.
Heat a nonstick griddle or skillet over medium heat.
Pour approximately ? cup batter onto the griddle for each large pancake that will form the turkey faces. Cook until bubbles form in the center, about 3 minutes.
Flip and cook for an additional 2 minutes, or until golden brown. Remove from the griddle.
Continue cooking the remaining batter to make approximately 6 large pancakes and 6 smaller pancakes.
To Serve:
Line a microwave-safe plate with paper towels and place 15 slices bacon on top.
Microwave the bacon for 6–8 minutes, flipping halfway through the cooking time, until crisp. Allow to cool slightly, then cut each slice in half lengthwise.
Place 1 large pancake on each serving plate and top with 1 smaller pancake.
Arrange the bacon strips along the top edge of each pancake to create the turkey feathers.
Use 6 orange M&M's and ½ cup chocolate chips to create the turkey faces and feet on each pancake.
Serve immediately with syrup if desired.
