Whisk together the flour, baking powder, sugar, salt and cocoa powder. Set aside.
In a separate bowl, beat together the eggs, buttermilk, butter and vanilla on low speed until combined. Add in 5-7 drops of pink food coloring until the mixture is pink.
Then pour the buttermilk mixture into the dry ingredients and stir until just combined. Some lumps are ok. Let the batter rest for 5-10 minutes.
Preheat a waffle iron and spray it with a non-stick cooking spray.
Add the batter to the waffle iron and cook according to the waffle iron’s instructions.
While the waffles are cooking, beat together the glaze ingredients with a hand held or stand up mixture until blended and combined.
Serve the pink waffles with the glaze drizzled on top and enjoy!

Refrigerate the leftover waffles in an airtight container for up to 1 week.
