Ingredients

Yellow Summer Squash

Tablespoon
Olive Oil

teaspoon
Pepper

teaspoon
Salt

teaspoon
Garlic Powder

Grated Parmesan Cheese
Instructions
Preheat the oven to 400 degrees Fahrenheit.
Cut the squash into ½ inch thick slices and place them in a large mixing bowl.
Pour the olive oil on top and season with the salt, pepper and garlic powder. Gently toss to coat the squash with the oil and seasoning mixture.
Place the squash on a single layer on a baking sheet. Top with the grated parmesan cheese.
Bake for 9-11 minutes until the squash is just tender. Be careful not to overcook or the squash will get mushy.
Switch the oven to the broiler setting and broil on high for 3-4 minutes until the cheese and squash starts to brown.
Remove from the oven. Serve immediately while warm and enjoy!
Notes
Refrigerate the leftovers in an airtight container for up to 3-4 days.
