In a large bowl, combine all the meatloaf ingredients. The mixture will be thick, so clean your hands and mix them all together thoroughly with your hands. Make sure to mix until just combined.
Rub olive oil onto the basket of your air fryer and preheat the air fryer to 350 degrees Fahrenheit. If the air fryer does not have a preheat option, then run the air fryer for 5 minutes at 350 degrees Fahrenheit.
Shape the meat mixture into a loaf shape. Make sure that the loaf is the same thickness throughout and make sure that the loaf will fit in your air fryer basket.
Place the prepared loaf in the air fryer and cook at 350 degrees Fahrenheit for 15 minutes. While the meatloaf is cooking, stir together the topping ingredients.
Then rub half of the topping mixture onto the top of the meatloaf in the air fryer.
Cook for 10-15 more minutes at 350 degrees Fahrenheit until the meatloaf has an internal temperature of 160 degrees Fahrenheit.
Carefully remove the meatloaf from the air fryer. Tent it with foil and let the meatloaf rest for 5-10 minutes.
Top with the remaining glaze mixture. Then the meatloaf is ready to slice, serve and enjoy!
Notes
Make sure that the meatloaf is cooked to a safe temperature with an instant-read meat thermometer before removing it from the air fryer. Refrigerate the leftovers in an airtight container for up to 5 days.
