Enjoy the best comfort food when you make this easy Crock Pot Chicken Tortellini Soup Recipe. The cheese tortellini and tender chicken make this delicious.
Place 3 peeled and diced carrots, 3 diced celery stalks, 2 teaspoons minced garlic, and 2 boneless skinless chicken breasts in the crockpot. Add ½ teaspoon dried basil, ½ teaspoon dried oregano, ½ teaspoon dried thyme, 1 teaspoon salt, and 1 teaspoon pepper. Pour in 6 cups chicken broth and stir to combine.
Cover and cook on low for 8 hours.
Remove chicken, shred and stir into the crock pot.
30 minutes before ready to eat stir in 16 oz cheese tortellini
Cover and cook until soft.
Serve with fresh parsley.

Recipe Tips
Reheating - The pasta will soak up the broth. When reheating, I like to add more chicken broth.
Prepare Veggies - Cut vegetables the same size so they all cook evenly. I prefer larger chunks so they don't get mushy during cooking or when reheated.
Chicken - Use chicken thighs instead of chicken breasts. Try rotisserie chicken to save even more time. You can even use leftover chicken and this recipe is even easier.
Chicken Variations - Substitute ground chicken or ground pork in this recipe.
Spices - Add 1 tablespoon of Italian seasoning for a new flavor.
