Crockpot lemon chicken is so light and refreshing for a great meal. The creamy lemon sauce is delicious over the chicken and pasta for an easy dinner idea.
In a large skillet brown the chicken in 2 tablespoons butter.
Place in the slow cooker. Season with salt, pepper, Italian seasoning.
Top with the minced garlic and butter (cut into pieces)
Squeeze the lime juice over the top.
Cover and cook on low for 5 hours.
Then in a small bowl whisk together the cornstarch in the half and half.
Stir in the crock crock and cook on high for 1 hour.
Serve over angelhair pasta with parmesan cheese and more fresh lemons.

Recipe Tips
Cook Chicken - For the best flavor, we like to brown the chicken before adding to the crock pot. This allows for the chicken texture to have a crispy texture and then slow cooked for a juicy center.
Adding Ingredients - Add the ingredients after adding in the chicken.
Cooking Chicken - We recommend cooking this recipe on low for about 5 hours or on high for 3 hours. This allows for the seasoning to really marinate in the chicken. Cook time may vary based on your slow cooker.
Thicken Sauce - Adding in the corn starch slurry for the chicken to have a thicker sauce. This is great to serve over the noodles, rice, or potatoes. If you prefer, you can also use flour.
Frozen Chicken - If you have frozen chicken, you will need to thaw it before cooking in the pan. But you can also skip the step of cooking it in the skillet. Then put the frozen chicken directly in the slow cooker.
Serving - You can serve the lemon chicken as a whole piece. We like to shred the chicken and serve over noodles or rice. We like to pour the extra lemon sauce over the top for dipping our bread into.
Variation Ideas
Chicken Broth - For added flavor, you can cook the chicken in chicken broth or chicken stock. Lemon juice and chicken broth makes a delicious combination. We have even added in lemon zest to enhance the flavor.
Seasoning - Feel free to change the seasoning in this recipe. You can add in oregano, italian dressing mix, and garlic cloves. We love to garnish with fresh parsley.
Chicken - Instead of making this recipe with chicken breast. Feel free to substitute with boneless skinless chicken thighs or bone-in chicken thighs. Chicken tenderloins will also work for this recipe.
