2large bonelessskinless chicken breasts, cut into 1-inch cubes
¼cupolive oil
2tablespoonslemon juice
3clovesgarlicminced
1tablespoondried oregano
1teaspoondried thyme

For the Kabobs:
1red bell peppercut into 1-inch pieces
1green bell peppercut into 1-inch pieces
1yellow bell peppercut into 1-inch pieces
1large red onioncut into chunks
1zucchinisliced into 1/2-inch thick rounds
10-12cherry tomatoes

Instructions
In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
Add the chicken and toss until evenly coated. Cover and refrigerate for 1 hour.
Preheat the grill to medium-high heat.
Cut the bell peppers and red onion into 1-inch pieces. Slice the zucchini into ½-inch rounds.
Thread the marinated chicken, bell peppers, onion, zucchini, and cherry tomatoes onto the skewers, alternating the ingredients.
Grill the kabobs for 10-15 minutes, turning occasionally, until the vegetables are tender and the chicken reaches an internal temperature of 165°F.
Remove from the grill and serve immediately.
