2large bonelessskinless chicken breasts, cut into 1-inch cubes
¼cupolive oil
2tablespoonslemon juice
3clovesgarlicminced
1tablespoondried oregano
1teaspoondried thyme
Salt and pepperto taste
For the Kabobs:
1red bell peppercut into 1-inch pieces
1green bell peppercut into 1-inch pieces
1yellow bell peppercut into 1-inch pieces
1large red onioncut into chunks
1zucchinisliced into 1/2-inch thick rounds
10-12cherry tomatoes

Instructions
In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper. Add chicken cubes and toss to coat. Cover and refrigerate for 1 hour to marinate.
Preheat grill to medium-high heat.
Prepare bell peppers, onion, zucchini, and cherry tomatoes.
Thread chicken and vegetables alternately onto skewers.
Grill kabobs for 10-15 minutes, turning occasionally, until chicken is cooked through and vegetables are tender.
