In a small bowl, combine the softened cream cheese, diced jalapeño, and shredded cheddar cheese until well mixed.
Using a sharp knife, cut a deep pocket into the side of each pork chop, being careful not to cut all the way through.
Divide the cheese mixture evenly between the pork chops, pressing it deep into each pocket. Gently press the opening closed and wipe away any excess filling.
Season both sides of the pork chops with salt and pepper.
Place the pork chops on the grill and cook for 10-15 minutes, flipping once halfway through, until the pork reaches an internal temperature of 145°F.
Remove the pork chops from the grill and let them rest for 5 minutes before serving.
