Enjoy Taco Lasagna Recipe any night of the week for dinner full of cheesy and delicious layers. Lots of ground beef, salsa and more blend for a great meal.
2cansDiced Tomatoes with Green Chiles(Rotel - 15 ounces each)
1canRefried Beans(15 ounces)
10-12regular sized flour tortillas
3cupsMexican Blend Shredded Cheese
Instructions
Preheat the oven to 350 degrees Fahrenheit and spray a 9X13 baking dish with non-stick cooking spray.
In a large skillet, cook 2 pounds ground beef over medium heat until browned. Drain excess grease.
Add ½ diced white onion and cook for 2 minutes until softened.
Stir in 1 cup salsa and 1 packet taco seasoning. Cook for 2–3 minutes until simmering.
Add 1 can black beans and 2 cans diced tomatoes with green chiles. Cook uncovered on medium-low heat for 5–7 minutes.
Layer 1/3 of the flour tortillas (about 3–4 tortillas) on the bottom of the baking dish.
Spread half of the 1 can refried beans over the tortillas, then add half of the beef mixture and top with 1 cup shredded Mexican cheese.
Repeat the layers: tortillas, remaining refried beans, remaining beef mixture, and 1 cup shredded cheese.
Top with the remaining tortillas and the final 1 cup shredded cheese.
Bake for 20–25 minutes until heated through and the cheese is melted.
Let rest for 5–10 minutes before slicing and serving.

Expert Tips

Baking Dish - We recommend spraying baking dish with cooking spray to easily serve this lasagna. It will also make cleanup a breeze.
Cheese - We like to shred our own cheese as it taste and melts better. Pre-shredded cheese as added ingredients that could make the cheese not melt as well.
Baking Lasagna - We did not cover this lasagna when baking as we want it to heat through. Cooking time will vary but you will know that the lasagna is finished baking when the cheese is melted.
