How to Make Penne alla Vodka

Step 1 – Cook pasta to al dente based on the package instructions in a large pot. Drain and rinse with cool water.

Step 2 – Heat the oil and butter in a large skillet over medium heat. Add in the diced onions and saute until the onions are soft (5-7 minutes) with wooden spoon.

Step 4 – Gently stir in the vodka and bring to a low boil (bubbling slightly) and cook for about 30 seconds.

Step 5 – Whisk in the tomato paste, oregano, dried basil, salt and pepper until combined and smooth.

Step 6 – Reduce the heat to low and carefully whisk in the heavy whipping cream.  Simmer over medium low heat and cook for a few minutes until the sauce starts to thicken.

Instructions

  • Cook 12 ounces penne pasta based on the package instructions. Reserve some pasta water, then drain.
  • Heat 1 tablespoon olive oil and 2 tablespoons butter in a large skillet over medium heat. Add 1 small finely chopped onion and cook until soft.
  • Stir in 2 minced garlic cloves and cook for 1 minute.
  • Add ½ cup vodka and simmer for 2-3 minutes.
  • Stir in ¼ cup tomato paste, 1 teaspoon dried oregano, 1 teaspoon dried basil, ½ teaspoon salt, and ½ teaspoon black pepper.
  • Reduce the heat and stir in ¾ cup heavy whipping cream until smooth and combined.
  • Add the cooked penne pasta and toss to coat in the sauce. Add reserved pasta water as needed to thin the sauce.

Any type of easy bite size pieces of pasta will work instead of penne pasta in this recipe.
