Slow Cooker recipes are great year round. Even though school is out during the summer months, we still like easy meals. This Crock Pot Hawaiian Chicken is one of those meals that is always a family favorite.

This Hawaiian Chicken is so flavorful and easy to make. Cooking with chicken thighs and the added pineapple chunks, peppers and the easy sauces makes this come together so easy.

This Hawaiian Chicken is a crowd pleaser. It is perfect for a weeknight meal or feeding a crowd. Add a side of rice and it is the perfect meal to come home to. You can have dinner in on the table in less than 30 minutes.

What is Hawaiian Chicken?

Hawaiian Chicken is a sweet and tangy meal that is naturally gluten free and dairy free. It is a light meal that is traditionally cooked with chicken, pineapple chunks, brown sugar and peppers.

We love to serve it during the summer months since it is light and healthy.

Ingredients needed - chicken thighs, pineapple chunks, lime, minced garlic, orange juice, hoisin sauce, soy sauce, ground ginger, salt and pepper, red bell pepper, yellow bell peppers, cornstarch, cold water, sesame seeds.

Ingredients:

  • Boneless Skinless Chicken Thighs, diced into 1 inch pieces
  • Pineapple Chunks (20 oz can, not drained)
  • Lime, Juiced
  • Minced Garlic
  • Orange Juice
  • Hoisin Sauce
  • Soy Sauce
  • Ground Ginger
  • Salt
  • Pepper
  • Red Bell Pepper, Diced
  • Yellow Bell Pepper, Diced
  • Cornstarch
  • Cold Water
  • Sesame Seeds

How to Make Crockpot Hawaiian Chicken:

  • Add Chicken and Pineapple to Slow Cooker – Place the diced chicken thighs and the pineapple chunks in a crock pot. We pour the pineapple juice in as well.
  • Mix together sauce ingredients – In a medium size bowl, whisk together the lime juice, minced garlic, orange juice, hoisin sauce, soy sauce, ground ginger, salt and pepper.

  • Pour this mixture over the other ingredients in the crock pot.

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through.

  • Thicken the Sauce – In a small bowl, whisk together the cold water and cornstarch, Stir this mixture and the bell peppers into the crock pot.
  • Continue Cooking – Cover and cook on high for 20-40 minutes until the peppers are tender and the sauce has thickened.
  • Serve and Enjoy – Top with the sesame seeds and enjoy!

Slow Cooker Hawaiian Chicken Variations:

  • Other Meats – Instead of chicken Beef, Pork, or Turkey. You do not need to change the cooking time.
  • Add More Vegetables – I love adding in more vegetables. With this amazing sauce, my kids will eat them without any complaining.
  • Spicier Hawaiian Chicken – If you want it a little spicier, add in some slice jalapeno’s or red pepper flakes.
  • Healthy Option – If you prefer, you can substitute the brown sugar for honey or another sweetener option.
  • BBQ Sauce – For a smokier flavor, mix in some barbecue sauce.

Sweet Hawaiian Chicken Crockpot Tips:

  • Use Another Type of Chicken – You can use Chicken Breast instead of Chicken Thighs.
  • Rice Tip – Freeze rice to make this meal even easier during the week. I love to cook a bunch of rice in advance in the slow cooker. Divide into equal portions and freeze for later.
  • Pineapple Options – Any pineapple will work! We used pineapple chunks but rings, crushed or fresh pineapple whatever you have will work.
  • Use Frozen Chicken – Frozen chicken thighs are fine to use. I have literally taken this from freezer to crockpot and walked out the door for the day.

Since this meal is already loaded with a protein and vegetables. We like to serve easy, light side dishes.

  • White Rice
  • Brown Rice
  • Cauliflower Rice
  • Steamed Broccoli

How to Store Leftovers:

Store the leftovers in an air tight container in the refrigerator for up to 5 days. This Hawaiian Chicken is great the next day. We actually think it taste better since all the ingredients marinate together overnight.
