I’m going to be honest, I am not sure exactly what to call this recipe. One thing that I do know is that it is a bite of heaven in your mouth. When you think of these bars, think chocolate chip cookie, but more cake-like. It is hard to put into words, but trust me – one bite and you will not be sorry.

It is so hard to beat the classic chocolate chip cookie. But this recipe definitely comes close. Choosing to take everything you love about chocolate chip cookies and making it into one cake is genius.

It is so much easier than scooping out each cookie and trying to bake them to perfection. The hardest part of it all is deciding if you want a middle piece or an edge. They are loaded with flavor and taste amazing!

  • Chocolate Chips – Feel free to change the chocolate chips to peanut butter chips, white chocolate chips, dark chocolate chips, caramel chips or even cinnamon chips would be good!

  • Chewy Chocolate Chip Cookies – For a chewy cookie cake, use one egg yolk and 2 eggs instead of 3 whole eggs. Combine the egg yolk and vanilla in step three as normal.
  • Sprinkles – If you are celebrating someone special, add in sprinkles for the holiday or birthday that you are celebrating.

Step 1 – In a large bowl, mix softened butter and brown sugar together until creamy.

Step 2 – Add eggs, one at a time, mixing well the wet ingredients between each addition. Don’t worry, it is supposed to be pretty thin.

Step 8 – Bake for 30 minutes or until the top is a beautiful golden brown. Be careful not to overcook. Let cool slightly. Cut. Serve. Enjoy!!

  • Combining Ingredients – You can mix the ingredients by hand, electric mixer or with a stand mixer with the paddle attachment in a medium bowl. Make sure to not overmix as it might change the texture of the baked cookie cake. Scrape the sides with a spatula to ensure all ingredients are mixed together.
  • Flour – Make sure to measure flour accurately. We recommend using a food scale to ensure that you are adding the right amount of flour to the ingredients.
  • Baking Time – Cooking time will vary on this cookie cake. You do not want it to overcook. Remove the cake from the oven once the top is golden brown.

Serving Suggestions

This chocolate chip cookie cake also makes a great birthday cake! Simply bake it on a pizza pan or in a springform pan and top it with buttercream frosting or your favorite frosting recipe.

Chocolate frosting would be decadent! Line the bottom of the pan with parchment paper for easy cleanup. Keep in mind that you may need to adjust your bake time accordingly.

You might as well plan on doubling the recipe and topping one with frosting and making one as is. It is even delicious served with ice cream, sprinkles and chocolate syrup.

Yes, you can freeze this chocolate chip cookies cake in a freezer safe container for up to 3 months. We have even slice the cookie cake with a knife and froze in individual slices so we can take out the amount we need. Just thaw on the counter when ready to enjoy again.
