Step by Step Instructions

For the Cookie Cake

  • Step 1 – Preheat the oven to 350 degrees F. Spray a 9 inch round cake pan or pie dish with a non-stick baking spray. We have even lined it with parchment paper to easily remove from the pan to cut.
Mixing butter and cocoa powder and adding in eggs in a bowl

Step 2 – In a large mixing bowl, beat together the butter with brown sugar and granulated sugar until creamy.  Then add in the egg and vanilla extract.

Mixing in baking and salt then add in flour to butter mixture

Step 3 – Mix in the baking soda and salt.  Then slowly add in the dry ingredients until just combined.

Stir in M&M Candies into the cookie batter in a bowl

Step 4 – Gently stir in half of the M&Ms into the flour mixture. Combine until texture consistency is smooth and creamy.

Step 5 – Press the cookie dough batter into the prepared pan and then press the remaining M&Ms on top.

  • Step 6 – Bake for 20-25 minutes or until the edges are just starting to turn slightly golden brown.  Be careful not to overcook. It’s better to unmake the cookie dough than over bake it as the cake will continue to cook as it cools.
  • Step 7 – Let the cake cool completely before adding the frosting.

How to Make Frosting

Combining the butter and cocoa powder together in a bowl

Step 1 – While the cake is cooling, prepare the frosting.  Beat the butter and cocoa powder together with a hand held mixture until smooth.

Mixing in powdered sugar into the cocoa powdered mixture

Step 2 – Then slowly add in the powdered sugar.  Add in the vanilla extract and slowly add in the milk until creamy.

  • Step 3 – Pipe the frosting with a star tip onto the edges of the cookie cake and top with more M&Ms if you prefer.
  • Step 4 – Then the cake is ready to slice, serve and enjoy!

Recipe Tips

  • Baking Pan – This cake can be made in a 9 inch pie pan as well.
  • Combining Ingredients – Make sure not to over mix the cookie dough or the cookie cake will be tough.  You can combine with a stand mixer or with a hand mixer.
  • Baking Cookie Cake – Bake the cookie until edges are golden brown. Make sure to not overcook the cookie. The cookie will finish cooking while it is cooling in the baking pan. Baking time may vary.
  • Piping Bag – For best results and a beautiful finish, use a piping bag to add frosting to the cookie cake.
  • Serving – This cookie cake is delicious served with vanilla ice cream.

Frequently Asked Questions

How to Store Leftovers

Store the leftovers covered at room temperature for up to 4 days. There is no need to store in the fridge. This cookie cake does not last long in my house.

Can I Freeze?

Yes, you can freeze the cookie dough or already baked cookie cake. If you are freezing the cookie dough, we like to press into a disposable pie pan, cover with plastic wrap and aluminum foil and freeze. You can also freeze the baked cookie cake but wait to frost it until ready to serve. Thaw the cake at room temperature, then frost and serve. If store properly the cookie dough and cookie cake will last about 3 months.
