  • Bell Pepper – I like to dice up Red Bell Pepper and Green Bell Pepper. Frozen chopped bell peppers work too — no need to thaw, just add a couple extra minutes to the simmer time.

  • Petite Diced Tomatoes – Easily swap with regular diced tomatoes

Can I Make This in the Slow Cooker?

    One of our favorite soups. We love it more than stuffed peppers themselves. My only swap is quinoa in place of rice as my Dad chokes on rice for some reason great recipe.
