How to make Crockpot Chicken Fajitas

Basically all you do it toss everything but the bell peppers in the crockpot. Let them cook on low all day.

A slow cooker filled with chicken, salsa, and taco seasoning.

This is such an easy recipe when you are busy and need something fast.

Cooked chicken, with salsa mixed in.

About 2 hours before dinner is ready add in the sliced bell peppers. Now if you are not picky about your peppers, you can add them in the morning.

Shred the chicken and then serve with warm tortillas. Simple!

A tip if your fajitas look extra saucy

Because the chicken and vegetables release their own juices as they cook, you may end up with more liquid in the crock pot than you expect — that’s completely normal. If you’d like a thicker, less brothy filling, use a slotted spoon to serve the chicken and peppers, or ladle out some of the extra liquid before serving.

Tips for the Best Crockpot Chicken Fajitas

  • Cut chicken breasts into even-sized strips so they all cook through at the same rate.
  • Avoid lifting the lid while cooking — each peek lets out heat and adds to the cook time.
  • Use a salsa you’d happily eat on its own. It’s the main flavor base for this recipe.
  • Make a double batch and freeze half for an even faster dinner next time (see Make It a Freezer Meal below).

How to Serve Chicken Fajitas

Serve shredded chicken fajitas in warm tortillas

Spoon the chicken and pepper mixture into warm tortillas and let everyone add their own toppings. Try my Best Flour Tortilla Recipe if you have a few extra minutes, or use corn tortillas instead. See Best Fajita Toppings for topping ideas.

This chicken is just as good outside a tortilla. Spoon it over rice for a fajita bowl, add it to a bed of lettuce for a taco salad, or skip the carbs altogether and serve it straight from the pot.

Grab rice from the freezer in the morning so it’s ready to reheat by dinner — it’s a simple way to get a fajita bowl on the table just as fast as the tortilla version.

Make It a Freezer Meal

Want dinner ready to go on a busy week? Add the raw chicken, salsa, taco seasoning, bell peppers, and onion to a large freezer bag, remove the air, and freeze flat for up to 3 months. The night before you plan to cook it, move the bag to the fridge to thaw completely. On cook day, dump the thawed mixture straight into the crock pot and cook as directed.

Stretch This Meal for a Bigger Family

Add a can of drained black beans or a batch of rice to the tortilla filling to feed 2 more people for just a few cents more per serving. It’s an easy way to make this $2.73-a-serving meal go even further on a tight grocery budget.

Frequently Asked Questions

Can I use frozen chicken breasts?

For food safety, thaw the chicken completely in the fridge before adding it to the crock pot. Cooking from frozen means the chicken sits in the “danger zone” temperature too long before the slow cooker heats up enough.

Can I use chicken thighs instead of chicken breasts?

Yes. Boneless, skinless chicken thighs work well in this recipe and tend to stay extra juicy. They may cook slightly faster than breasts, so start checking for doneness on the earlier end of the cook time.

How do I store leftovers?

Store leftover chicken and peppers in an airtight container in the fridge for up to 4 days. Reheat in the microwave or in a skillet over medium heat until warmed through.

Can I freeze the leftovers?

Yes. Let the chicken and pepper mixture cool completely, then freeze in an airtight container or freezer bag for up to 3 months. Thaw overnight in the fridge before reheating.

Recipe Notes

  • If you like softer bell peppers, you can add them at the beginning of the cook time with the chicken to save time!
  • Thaw chicken completely before adding it to the crock pot for food safety and even cooking.
  • The chicken and vegetables will release liquid as they cook — this is normal. Use a slotted spoon to serve for a less brothy filling.

I would love to try this recipe. But I am kinda confused. Do u put peppers in with the chicken or do u wait till the end?

    1. Carrie says:

Tammy – Usually I put the peppers in with the chicken but the peppers do get very soft. So if you prefer firmer peppers, I recommend adding the peppers in the last hour of the cook time.
